Wet Your Whistle | Lemon Verbena Lemonade

I may not be sweltering in the extreme heat like all of my family and friends and Texas but summer has definitely arrived here in southern California. Inspired by my overgrown lemon verbena plant that needed harvesting and my recent cravings for lemonade, I concocted this thirst quenching drink.

Lemon Verbena Lemonade
Makes approx. 6 cups

the Ingredients

1 cup freshly squeezed lemon juice (~6 lemons)
1 cup lemon verbena simple syrup (recipe follows)
3-4 cups filtered water (I used 3.5 cups--but I like it tart)

the Method

Mix ingredients in a large, covered pitcher. Let chill before serving.

Lemon Verbena Simple Syrup
Mix together 1 1/2 cups sugar, 1 1/2 cups water and 1 cup chopped lemon verbena in a saucepan. Bring to a boil and let boil for a minute or two. Cover and let cool. Once cool, pour the mixture through a strainer to remove the herbs. This is also delicious in mixed drinks!

To take this beverage up a notch, this lemonade is awesome with a bit of whisky mixed in!
Enjoy!

    1. Rachel, It is!! So yummy. It even got my husbands stamp of approval! If you don't have lemon verbena, you could try thyme or rosemary simple syrup. Enjoy and let me know how it goes for you. -Bailey
